Tex-Mex Lasagna


Well Blizzard 2011 was quite the spectacle yesterday. I do not recall an instance were the cold whether had such an extreme impact on so many people and caused an utter lock down to basically all households in its trembling path. We have been home bound now for the last 3 days, only venturing out into the harsh winter whether to feed the animals in the barn. Thus, today is a new day and the FB's are attacking the Arctic temperatures full force by beginning to plow us out! So I thought it would be fitting to post a comfort food classic with a Tex-Mex twist. It was very easy to assemble ahead of time, and was able to please HH's palate. A hearty meal that is absolutely perfect for this cold blistery days.

I recently came Rachel's cooking blog www.4kowboys.blogspot.com and found many wonderful recipes that I plan on trying. Although she is a Steeler fan, I have enjoyed gazing through her blog, hence this is one of her recipes listed below.

Thank you for trying one of my recipes and blogging about it! I hope it was a hit with the family.
I take it you are trapped somewhere out west/central of the United States... and hence NOT a Steelers fan! That is ok. My oldest son was born in Illinois and is a proud Bears fan. However, when they lost to the Packers he reverted back to being a Steelers fan for the Super Bowl only. I told him a true Bears fan would stay one, or atleast become a Packers fan, but alas, since we no longer live there... Steelers it is! Woohoo! (At least I taught him something right, lol) :o)
