As the summer is dwindling away and the fresh garden produce is nearing its end, I am still attempting to utilize what vegetables still remain. And you really can not go wrong with a reliable Caprese Salad. I was very intrigued by the Roasted Mango Dressing, as mango is one of my favorites. It has such a vibrant golden color with a pungently refreshing taste. Keep in mind, the components in this dish can be as heated or sweet as you desire (more agave/honey compared to jalapeno). I thoroughly enjoyed snacking on this appetizer last evening.
