Pimiento Cheese Chicken....


You know that one night each week that tends to be alittle more heck'it then all of the rest? The night that follows a day of going in a million different directions never getting a moments rest. And just when you think things are about ready to slow down, that dreaded questions comes up, "Mommy I'm hungry whats for supper?" Then you think to yourself, what on earth can I through together that does not exsert that much energy and can be done very quickly. Well, this my friends is one of those exceedingly easy dishes. Only requiring 2, yes 2 ingredients, besides salt and pepper, an entree like this really does exist. And if your family relishes on this scrumptious southern delicacy well Pimiento Cheese Chicken is just for you!

Pimiento Cheese Chicken

4 boneless chicken breasts
1/2 tsp season salt
1/4 tsp pepper
3/4 cup premium pimiento cheese

Place chicken between 2 sheets of plastic wrap and begin to take your aggressions out. Flatten each piece of chicken to approx 1/4 inch thickness. Then sprinkle with some S & P. Place on a grease sheet try and bake for 15 minutes, in a 350 degree oven. Take chicken out and generously dolp 3 large helpings of pimiento cheese on each piece. Place back into the oven, for another 10 minutes or until juices run clear in the chicken. Voila Done!

Now go and take off your stilettos, and pour yourself a large goblet of wine.
