Caramel Apple Muffins

 
These rustic Caramel Apple Muffins are simply Divine! A true seasonal staple of fall is the luscious Caramel Apple. This rendition was exceedingly scrumptious. Multiple components uniting to form a lucrative masterpiece of sorts. Each layer producing a flavorful burst of addictive compliments in your mouth. Giving into an almost Ecstasy state of mind.
 
The muffins are exceptional my peeps.
 
You have the combination of sweet from the caramel, tartness is enhanced from the apples and salty is protrade by the addictive pecans. A definite delightful seasonal treat.

Knock You Naked Brownies

 
Such a clever little name! Did it grab your attention?  Well, it definitely caught our interest here at the farmstead. I am always on high alert for the "Next Best" brownie. To say this would suffice, would be discrediting the recipes sheer brilliance. As mother time is usually of the essence, I find it reassuring when I come across recipes that are of the "box" decent. You can jazz them up in a variety of ways, yet the tedious component is already taken care of for you. This is one of those grand recipes.
 
If you would like to omit one step of this recipe, I would suggest, instead of melting your caramels. Purchase the little round balls of caramels not even melting or using milk, then pour them between layers. Works like a charm!

Strawberry Sparkle Cake....

 
Before I begin my joyous rant on this exceptionally Divine remix of Angel Food Cake. I want to first give a shoot out to my victorious Green Bay Packers who putting a whop'n on Titans! After a grueling start to their 2012 season, the Pack have finally seemed to rebound. Finding their rhythm on the field, and excelling in both offense and defensive areas. Our GBP's are back on top of their game. And cheese heads around the world are rejoicing! Amen.
 
This is for all of you AFC (Angel Food Cake not the American Football Conference) lovers out there! When it comes to satisfying your sweet tooth, with a low calorie alternative, the first thing that comes to mind is AFC. Light and airy yet full of tantalizing flavors, that leaves you immensely satisfied. As you can see, this is not your average AFC. It is stuffed with an incredible strawberry filling and topped with layers of whipped cream. This is a desert that nears perfection in my book! And will be repeating again real soon!

Scrumptious Flat Apple Pie.

 
I've had this recipe on my radar for quite sometime, but never took the time to actually make it. I was a fool! This was an incredibly delicious treat. Dexter and I could have easily finished off the whole thing, if it wasn't for Baby D's will power coaxing me out of it. Such a smart young man, to engage portion control to his mother.
 
Now keeping reality at bay, I will break down this recipe before you. The rustic presentation was a crucial assist towards its luring appeal. Could easily be served at any dinner with an emphasis perhaps on the "Family Style" would be recommended. If you don't have the time, or patience's, or keep a frozen stash in your freeze; To make your own dough, I would suggest purchasing the old reliable dough in a can. Either the blue label or any other generic would work brilliantly. As far as ingredients go, you should have everything on hand with perhaps the exceptions of the apples. Yet considering this time of year, you may keep the doctors antidote on near by. Bon Appetit my friends!

Peanut Butter Cheerio Treats.


May I introduce to you a Farm Boy favorite, well as of today! I was recently browsing through my new fascination, Pinterest, and came across this recipe. After scanning the ingredient combination (only 5 ingredients) I instantly, I clicked on it! You really can't go wrong with Peanut Butter and Cheerios, and 10 minutes of your time. Then to bump it up another notch, I placed them in individual cupcake wrappers. That way everyone would have their cute portioned bites. This would be great to serve at your next kiddo party as well. Love this recipe.

Addictive Chocolate Puffs


Last week a fantastic friend of mine stopped by to visit the farmstead. And brought along with her a recipe of a terribly addictive treat. Now this delightful finger food only requires TWO ingredients. And only takes about 5 minutes of prep time and a total of 15 minutes to make all together, most of which it is setting in freezer. This sweet, salty combination is nothing short of Farm Boy heaven. It was a proven winner that shall be repeated.

Addicting Puffs...

1 Bag of these
CHESTER'S® Butter Flavored Puffcorn Snacks
You can find them at your local grocery store, in the "chip isle".

Then you will need a package of this....


Now use the Almond Bark of your preference; White, Chocolate, Dark Chocolate. Or you could even use a bag of chocolate disks (color of your choice) and add a few drops of almond extract.

Place Puffs in a bowl, melt your chocolate bark in the microwave (careful not to over cook). Then pour chocolate onto puffs and stir. Place on a sheet tray lined with parchment paper, and either let set at room temperature to harden or place into the freezer for approx 10 -15 minutes. Once hardened, take a bite. Then chew slowly, very slowly. Whip the sheer look of disbelief off of your face and chomp on another "Addictive Puff".

Dark Chocolate Angel Food Cake....


Last week we celebrated Grandma SMS (Sugar Mamma Sherry's) Birthday. One of her favorite desserts is a ravishing Angel Food Cake, drizzled with dark chocolate syrup. But since I was in charge of the treat portion of the meal, I of coarse decided to change it up abit. Instead going for a Dark Chocolate Angel Food Cake, that's right, dark chocolate going throughout the cake. It was an incredible twist on the classic, still light and airy yet full of flavor. But I do have a confession to make! Shhhhh. Don't tell Grandma SMS, but....It only required one box of Angel Food Cake mix (follow direction, and ingredients on the box), then all I need to do was mix in 1/2 cup of dark chocolate cocoa powder and cook as per packaged directions. Easy Peasy, I know! The hardest thing about this recipe was borrowing an Angel Food Cake pan.

So if you are looking for a "light" dessert for your holiday season, this would be absolutely perfect. Garnish with strawberries and mint. Superb.

Dark Chocolate Angel Food Cake

1 box Angel Food Cake (use ingredients that your box requires)
1/2 cup Dark Chocolate Cocoa Powder

Mix all of the ingredients together, pour into Angel Food Cake Pan. Cook until toothpick comes out clean, approximately 50 - 60 minutes.


I was inspired by this recipe, and if your feeling freaky you may consider making the Chocolate Glaze as well.

Peanut Butter Brownie Bites...


Last weekend our church put on their annual "Chili Supper". So Baby D and I scoured our cookbooks until he found a recipe that he thought everyone at the Chili Supper would enjoy. With few ingredients required, prep time is literally only 5 minutes. A tasty treat that we were able to through together in 5 minutes, yet it gives the illusion that we spent half the morning baking it. Who doesn't love that! These were a proven satisfying delight.


Peanut Butter Brownie Bites

1 package milk chocolate brownie mix
1/2 tsp vanilla extract
1 (3oz) package cream cheese
1/3 cup creamy peanut butter
1 cup peanut butter M & M's (or depending on your mood 2 cups)

Preheat oven 350 degrees. Line bottom and sides of an 8 inch square pan with aluminum foil, allowing 2 to 3 inches to extend over the sides; lightly grease foil.
 Prepare brownie batter according to package directions for brownies, plus add your vanilla into the batter. Pour batter into prepared pan.
Place cream cheese in a microwave safe bowl. Heat for 15 seconds. Add peanut butter and stir until smooth and blended. Drop peanut butter mixture by 16 rounded teaspoonfuls onto batter (this can be alittle sticky). Sprinkle candies over batter.
Bake for approx 50 minutes or until batter is cooked throughout. Will make 16 squares.

Peanut Butter Whoopie Pies


For a special treat last week, Baby D and I made the FB's some PB Whoopie Pies. Now for those of you who are unfamiliar in all things Whoopie *wait for it* Pie, let begin by stating how easy they are to make. All you need is to bake a batch of your favorite chocolate cookie recipe, or you can do it the semi-homemade way by purchasing a package of these Double Chocolate Chunk cookie mixes (they are readily available at your local grocery store). Bake the cookie as per package directions and then let cool. While your waiting, grab your favorite little helper and have him mix up some peanut butter and marshmallow fluff. Once the cookies have cooled, slather your peanut butter mixture in between two of the cookies. The curial part of this whole recipe is next: Let your little helper take giant bite! Oh so good!

Festive Snack Mix...


Can you believe it is October already? It seems as though, the older I am becoming the faster time seems to fly by. Yet Baby D and I always seem to make time for some special treats. Anymore, I am always on the look out for recipes that Baby D and I can do prep together. And these little munchies were absolutely perfect for us to do as a team (lots of dumping ingredients into a giant bowl, Baby D rocks at that). Even once they cooled, Baby D was able to help me bag them up for the FB's. This proved to be an excellent snack, that your kiddos can help you prepare for the ghoulish month ahead.

This recipe called for candy pumpkins, but I found candy corn to be more assessable. *insert twang*  "Because I reckon in these here parts, we prefer all things corn."

Chai Latte Cupcakes...


I love me some cupcakes and I absolutely adore a lovely cup of latte. So the combination of the two was exquisite in my book. And what made this recipe even more Divine was that it was made with a pre-made mix. Yep, cake out of the box! That beginning said, it was spectacular. Anymore it is hard for me to find the time to make desserts from scratch (or perhaps the patients), so when you come across a recipe that you can take a box mix and add your own special twist on it, 9 chances out of 10 it will be superb.

Avalanche Bark


With harvest right around the corner, it will soon be time to get serious about making some snacks for the FB's. I am always on the prowl for quick and easy desserts, that can be transported without any hassle. These little yummy's, are a delightful take on your traditional Rice Krispy Treats. But they have an added bonus of flavors; a creamy rich peanut butter, chocolate chips and marshmallow. How can you go wrong with that combination? Plus *insert Hallelujah* they only require 5, yes 5 ingredients. I can whip them up in no time, then they require a resting time of 30 minutes in the refrigerator, which translates into No Oven Time.

These would be a sure kiddo pleaser when packed into his/her lunch box for school. Just look at that pudgy little hand in the picture above, sneaking alittle morsel.

The Ultimate Fruit Appetizer....


You know that wonderful fruit dip that you make every year. The one with the cream cheese. The one that you can not stop eating. Well, bust that recipe out again. Quite simply you fill phyllo cups with your favorite creamy fruit dip and top with your choice of fruit (perhaps even garnish it with fresh mint from your garden). A one bite wonder that all of your guests will thoroughly enjoy. Would highly recommend taking this to any summer gathering that you may be attending. But this recipe does come with a warning! Warning you to print out copy's of this recipe ahead of time, so when your guests asks you for the recipe you can simply hand them this 5 ingredient little miracle. Please excuse my arrogance, but it is hard to pull off all three key components in a dish: Simple, delicious and gorgeous. Hands down brilliant.

The Ultimate Fruit Appetizer

1 8oz package of cream cheese
1 7oz marshmallow fluff (a whole jar will do)
1 TBSP of orange juice
2 packages of phyllo shells (found in the frozen section, yes even in MarMo Town)
Assortment of fruit. I choose strawberries and blueberries going for the Independence Day theme.

Bake phyllo shells according to packaged directions, only takes 10 minutes or until slightly golden. Then mix first three ingredients with beaters to make sure it is combined throughout. Pour into toasted shells and top with an assortment of fruit. How easy is that?

Honey Glazed Apple & Pear Tart.....

 With the warm weather now hopefully right around the corner, we have been anxiously awaiting to get back into the fields. With our fingers crossed we will be maneuvering over some dirt real soon. Until then, I will continue to post some of my latest cooking creations. The honey glazed tart, was Divine! A light, flaky crust paired with the sweetness of fruit was a wonderful spring time treat. Requiring only 7 ingredients and can be baked in under 20 minutes, you really can not go wrong with this crowd pleaser. Not to mention, the gorgeous presentation, that looks like you spent hours on preparing. Now if you are not a pear lover, just use the apple slices, I made a row of just apple as per BDW's (Big Daddy Wayne) liking.

Eyes Of Newt


The spookiest month of the year is upon us. I love making treats like this, it provides some entertainment for the FB's during this busy harvest season. Simple treats like this are a snap to through together, and only require a handful of ingredients. This would be a wonderful snack to take to any ghoulish gathering.

Eyes Of Newt

20 mini powdered donuts
red decorating gel
20 green M & M's
Black decorating icing

Put doughnuts on a platter. Drizzle each with red gel. Place a drop of gel on the back of each M&M, and put one in the center of each doughnut. Top with a drop of black icing to form the pupil.

Pretty easy huh?

I even left out the black decorating gel, and I think they stilled turned out just fine.
