A Hot & Spicy Pizza and Dough....

 These recipes were in last months issue of Food Network magazine, so I thought I would give them a try. Baby D and I prepared them last week for HH, (Baby D is quite the little helper in the kitchen anymore) and they were a tremendous hit. The dough was light and a cinch to throw together, while the topping packed a hearty punch to palate. Simply delightful.

As an added bonus, I found myself with some extra time on my hands this past weekend. Since the whether was not very desirable, I was forced to occupy my time indoors. Baby D was not feeling the best, so he slept alot, I mean alot, I mean he was only awake for 2 hour intervals throughout the day alot. So I did some revamping of our blog. You will now notice that on the left hand side, about mid-way down the page there is a label bar. When you click on the icon of your choice, it will shoot you over to the page that discusses that particular topic. Prior to this, I was trying to manage four different blogs, and collaborating them all takes up to much time. So this will now be our "Blog" of choice.

 And for past recipes remember you can always click on the blue recipe box on the right side column or click HERE, and you can save to your favorites, I have two years worth of intriguing recipes on that page alone.

Pizza Mac & Cheese

Please let me begin by saying that the name of this entree is really quite deceiving. When I think of Pizza Mac & Cheese, I envision Macaroni and Cheese on top of a thick crust pizza dough. Instead this casserole is a fiery (not literally) twist, combining two childhood favorites. The base of this entree is a glorified noodle classic, a 39 cent box of Macaroni and Cheese. Moving on to the much needed protein, we layered in some ground beef and even snuck in some green peppers for added vitamin C (even when cooked down you my receive at least 10% of the original nutritional value, did I mention this is not necessarily one of my leanest dishes), then topped with rich gooey cheeses and of coarse pepperoni slices. Serve this to a wild pack of 6 year olds and I am sure that you will be praised.



Pizza Mac & Cheese



1 package macaroni and cheese

6 cups water

1 pound ground beef

1 medium onion chopped

1 small green pepper chopped

1 1/2 cups mozzarella cheese

1 1/2 cups shredded cheddar cheese

1 jar (14oz) pizza sauce

1/2 cup sliced pepperoni



Begin by cooking Mac & Cheese as per packaged directions, will cook approx 8-10 minutes. Meanwhile, n a large skillet, cook the beef, onion and green pepper over medium heat until meat is not longer pink, then drain.

Drain mac & cheese; stir in contents of cheese packet. Transfer to a greased round 2 1/2 qt baking dish. Sprinkle with 1/2 cup mozzarella cheese and 1/2 cup cheddar cheese. Top with beef mixture, pizza sauce, pepperoni and remaining cheeses.

Bake uncovered at 350 degrees for 30-35 minutes or until heated throughout.

Muffaletta-Stuffed Pizza Rustica...


Hello my love muffaletta, it is me your most crazed fan. As I have mentioned in the past, whenever I get the opportunity to seize a scrumptious morsel of this beloved dish I jump on it. Now, the term muffaletta in a sense means an almost pesto like consistency made with salty olives, giardiniera (vegetable mixture), typically loaded with 3 different meats, an assortment of cheeses, a variety of condiments, and this is all atop a warm crusty bread loaf (or in this instance pizza crust). It really is a slice of pizza heaven.
I adapted this recipe to accommodate ingredients that can be found in a small town grocery store. Such as instead of the fancy meat slices it called for, I used a more traditional pastry, salami and a ham. Also instead of making my own pizza dough, I opted for the marvelous Pillsbury in a can.

Pizza-Stuffed Chicken


Well, how were your holidays? Our were amazing, we just got back from the tundra late Sunday evening, so needless to say, we are still attempting to get back into the swing of things here at the farmstead. I have loads of magnificent pictures and experiences to share with you during our holiday escapades. So until I can get my photos edited, I will be posting some long over due recipes. This is one of our favorites, how can you resist a chicken breast stuffed with your favorite pizza topping? This child friendly entree, will easily impress your loved ones.

Pizza Stuffed Chicken

4 boneless skinless chicken breasts (about 1 1/2 lbs)
20 slices pepperoni, divided
3/4 cup shredded provolone cheese divided (I used slices works fine)
4 large basil leaves (optional)
1/2 tsp salt
1/4 tsp pepper
2 TBSP Vegetable Oil
Preheat oven to 350 degrees. Cut a horizontal slit through thickest portion of each chicken breast. Stuff each with 4 slices pepperoni, 2 TBSP of cheese, and 1 basil leaf. Secure with a wooden pick. Lightly spray each side of chicken with non stick cooking spray; sprinkle with salt and pepper.
In a large skillet, heat oil over medium high heat. Add chicken; cook 3 minutes or until done ( I omitted this step and simply put into greased baking dish, works out beautifully either way). Bake for 15 minutes or until no longer pink on the inside of chicken. Remove form oven. Cut remaining 4 slices of pepperoni into thin strips. Sprinkle chicken with remaining 1/4 cup cheese; top with pepperoni strips. Bake an additional 5 minutes or until cheese melts. Garnish with basil if desired.
