Mini Muffin Potato Tots...

 
These are by far the simplest home-made tots that I have ever made! Don't they just adorable? Just by gazing at them, it gives you the urge to pop one right into your mouth. Anyway right now, Racheal Ray  is doing a segment on her show, that demonstrates how many versatile recipe you can use with a "Mini Muffin Pan". I adore this concept for two reasons; One, I seldom think to use the mini pan, so to get my moneys worth out of it is fantastic; Second, I love small portions, if I could execute a tedious way of living on bite sized appetizers alone, I so would.

Homemade Tator Tots, Delish...


Here at the farmstead there are loads of Tator Tots consumed each year. Infact, they have even been known to triumph the American classic French Fry every now and again. It wasn't until recently that I came across a certain television show, that was demonstrating how to use up all of your left over holiday ingredients, that really sparked my attention. The homemade tot, is a marvelous way to use up all of your "extra" mashed potatoes that you have lingering around after this coming Christmas season. And if your feeling sassy, you could even stuff them with your "extra" ham and some shredded cheddar. Excelling your leftover ingredients into a separate culinary category of easy access finger foods. Now I highly encourage you to use your imagination on this one, we all know how many different leftovers we all have after the holidays. Experiment with this recipe, and feel free to share with all of us your results, so that we too can indulge in this crunchy classic.

Comforting Chicken Fried Steak With Tators And Gravy....


Yes, you can have hearty comfort food year round! Everyone enjoys a classic family dish that instills the basic essentials with a modern day twists. As I frequently mention, I like to prep our dinner ahead of time as much as possible. That beginning said, I was astonished by the fact that I could make mashed potatoes ahead of time and they could keep their creamy form even after being baked in the oven. HH is a potato aristocrat! He adores his meat and potato meals, and is extremely particular about how his "Tators" are fixed. So to get the thumbs up on a make-ahead potato, I was estactic. The creamy smooth texture, with the richness of some thick dairy ingredients, made this side dish a pure treasure for this farm wife. As for the Chicken Fried Steak, well lets just say it takes no time at all to prep and fry and it is one of HH's all time favorites. I have made this numerous times now, and has always been a huge hit at the dinner table. One thing to always keep in mind with CFS is always purchase your meat tenderized. I repeat tenderization (word?) is a key component for orchestrating this dish properly. So go ahead impress your family with an ol' reliable family favorite meal. They will thank you for it.

The Lazy Man's Pot Pie


I just love going into a supermarket, finding which ever produce is in season or product that is on sale, and concocting recipes that adhere best to them. Well last week, I found a sale on Turkey Breast Tenderloins, so I decided to give them a whorl. I bought two loins and cooked them in the crock pot ( approx 5 hours on low or until meat will shred easily) with a package of Onion Soup Mix and 1 cup water. Let me just say, that that alone was to die for. It was a good thing I bought two loins because Baby D and I could not stop nibbling on it. Infact in the future, I think I would cook just the turkey and serve it with potato's and a vegetable of choice. Mmmmm, it was yummy.  But this time, I went ahead and combined it with all of the ingredients for a pot pie (recipe below). Now this particular evening I did not have time to prepare a crust, so instead I simply topped it with biscuits. Hence the Lazy Man's Pot Pie. It was a full flavored, comforting delight!

Perfect Potato Salad


The hot summer months are now upon us. And what better to serve at a gathering then the ol' faithful potato salad. I am always searching for that suburb p. salad recipe, that will knock my stilettos off. Well, this decedent twist on traditional sure did aim to please. I was estacatic to see that it called for fresh herbs. Herbs that are now over grown in my garden and need to be taken advantage of. A refreshing side dish that would magnify even the tedious of palates.

I did not use the food mill as the recipe required. I prefer more texture in my salad, so instead I used chopped up red new potato's.

Beef, Cheddar and Potato Pie.......


This savory meat filled pie was a delightful spin on your classic "Meat & Potatoes" recipe. Using the puff pastry dough (found in your freezer section) as a shell, I was able to fill it with just about every level on the food pyramid. A very well rounded (no pun intended), entree that can even be made up to a day ahead of time. I found this dish to be an ultimate comfort food, with a hint of fabulosity. Who wouldn't want to eat something that resembles desert first at the dinner table?

P.W.'s Potato Skins, Bring On The Bacon!


A few weeks ago, we were invited to attend a social gathering amongst fellow MIZ......ZOU fans. Unfortunately we had something come up so we had to decline our invitations (*please excuse my awful, inappropriate language* DARN, DRAT, THAT STINKS, ect). However, I had already began preparing some dainty appetizers, for the festive shin-dig. Having choose Ree's pot skins, I was able to prep almost everything the morning of the big game. While still allowing myself ample time to dolp my sour cream and slice my scallions as proper garnish at the end. I used fingerling potatoes as I thought it would be easier to consume, while holding a cold beverage.

Stuffed Potato Ghosts


Well our wild week has came to an end, now it is back to reality. Remember when I mentioned that I challenged myself to make a complete meal, made strictly up of all things Halloween? Well, the side dish that I served was stuffed potato ghosts, do they not look ghoulishly delicious?

You will want to get at least 2 small bags of white fingerling potatoes, then you basically make your favorite "Twice Baked Potato Recipe". I would keep it fairly simplistic, since you want the "ghosts" to be white. After preparing your favorite "Twice Baked Potato" recipe you need to top your tators with cheese.  I would recommend, thin slices of Monterey Jack, you slice the cheese into 6 rectangles and place on each stuffed potato. Put in a 350 degree oven for 10 more minutes, once cheese is melted chop a scallion for the mouth and use finely diced olives for the eyes. Now I used this as a side dish, but I found a few of my guests were sneaking them as an appetizer, which I thought was a grand idea.
