Aunt Trish's Salad Dressing....


Make your own salad dressing! Really why not? I am writing this with such conviction now that I have converted into this magnificent lifestyle change. For the first time last week I actually attempted to make a condiment! I am a novice in this uncharted territory, but am really putting forth the effort into knowing what exactly is going onto our plates here at the farmstead. This maybe a small step in the right direction but we all have to start somewhere, am I right? And the best part is that Baby D can help me prepare this, this translates into a healthier version of the alternative and he will devour it because "he made it".

Beef With Snow Peas.....


Just gazing at this picture makes my mouth water. This entree was rich with flavor, you can see the wonderful glaze glisten off of the tenderized meat. I could have easily consumed this whole dish! No lie. Really no lie. But instead HH beat me too it (my thighs thank him), we were literally licking up our plates acting like pure scavenges, wanting just one more morsel of that descendant delight. Even while I am sitting here typing away, I am cautiously reliving that palate satisfying moment. It's like buying that wardrobe staple romper to add to your summer clothing collection good. And then finding the absolutely perfect pair of wedges to accompany that jumpsuit good. Yes, it is that good.

I only changed two minor things to the recipe; First: instead of browning the meat in the cast iron, I instead let it marinade and soften in the crockpot. Low for about 4-5 hours. Second: I choose not to use the recommended rice, but instead relied on my trusty rice noodles (I buy them in bulk now). Exquisite either way.

Summer/Winter Corn Fettuccine.....


I am a pasta fanatic! Even as a youth, I can recall always devouring any kind of noodles that were placed in front of me. Yet through the years, my intake for a rich pasta is only for special occasions, as my hip will not allow me other wise. And I can not seem to resist only a recommended palm full, as suggested to be proper portion control. But every once in a blue moon, I prepare a dish full of noodles. An entree, that I know full well that I will consume in a record pace in order to fulfill my cravings successfully. But it is so worth the extended hours at the gym, to satisfy my deepest desire.

Thus, coming across this entree I was very pleased with not only the final outcome, but all of the vegetables that were hidden within. This dish is loaded with a corn base. Each year, we freeze bags and bags of irresistible sweet corn so was a perfect dish for us. This would also be great for any kiddo's whom you have to sneak some veg's too.

I added shredded chicken to this entree, to have some much needed protein for HH and Baby D. Thank heavens, they enjoyed as much as I did so I would over indulge myself.
