Last week while our guests were in town, I made these tasty beauties for breakfast one morning. Well actually, I prepped them the night before and just put them in the oven the morning of, hence "Make-Ahead Muffin Melts". I was drawn to these "Grab and Go" morning essentials, for the simple egg factor. The eggs are hard boiled, then mixed into a scrumptious sauce, throw in some bacon and then top with a fabulous sharp cheese. Not only are these quick and easy to entertain your guests with, but they would be awesome to make for your entire family for breakfast one morning, just throw them into the oven.
